1 1/2 cups flour

1/2 cup cold butter

1/4 cup ice water

1 egg yolk

1 teaspoon white vinegar



1 cup light brown sugar

1/2 teaspoon salt

1/4 cup softened butter

1 teaspoon vanilla extract

  1. To make the dough, in a large bowl combine flour and salt. Whisk to combine. Cut the cold butter into cubes and then add to the dough. Use a pastry cutter to cut the butter into the dough until the mixture is in pea-size pieces.

  2. In a separate bowl combine water, the egg yolk, and vinegar. Mix to combine. Then add the dough and use a fork to combine.

  3. Now knead the dough and bring it to the form of a flat disc. Then wrap the dough with plastic wrap and place it in the refrigerator to chill for at least 30 minutes.

  4. Once chilled remove from the refrigerator. Roll out on a floured surface into a 16 x 12-inch rectangle. Use a 4-inch cookie cutter to cut 12 pieces.

  5. Place the pieces of dough into a muffin tin sprayed with cooking spray. Then form the dough around the sides of the muffin tin. Place in the refrigerator again while making the filling.

  6. To make the filling combine brown sugar, salt, butter, vanilla extract, and egg. Mix by hand until well combined.

  7. Now divide the filling and spoon into the tart shells.

  8. Bake at 425 F for about 15 minutes. Let cool completely before removing from the muffin tin.
