3 chicken breasts, cubed

1 diced onion

2 minced garlic cloves

2 teaspoons minced ginger

2 tablespoons curry powder

1 tablespoon ground coriander

1/2 tablespoon ground cumin

1 teaspoon paprika

1/2 teaspoon ground cinnamon



2 tablespoons tomato puree

14 oz. can tomatoes

1 cup chicken broth

14 oz. can coconut milk

1 tablespoon cornflour

2 cups spinach

fresh coriander for garnish

  1. Add vegetable oil to a skillet over medium-high heat. Then add chicken and cook for about 5 minutes, make sure to keep flipping it throughout.

  2. Add diced onion and cook for a couple of minutes. Then add in garlic, ginger, curry powder, ground coriander, cumin, paprika, cinnamon, salt, and pepper. Stir to combine and cook for a couple of minutes.

  3. Now add in the tomato puree, canned tomatoes, chicken broth, and canned coconut milk. Stir to combine and then bring to a gentle boil. Let simmer for about 10 minutes.

  4. Now mix the cornflour with 2 tablespoons of water to make a slurry. Pour this into the curry to thicken.

  5. Add the spinach and let cook until wilted. Then top with fresh coriander and serve.
