1 1/2 lbs. boneless skinless chicken breasts

1 diced white onion

14 oz. can diced green chiles

15 oz. can black beans

2 tablespoons olive oil



8 tortillas

3 cups mexican shredded cheese

2 cups red enchilada sauce

fresh cilantro for garnish

fresh sliced Jalapeños for garnish

  1. In a pan add olive oil over medium-high heat. Add onions and sauté for a couple of minutes. Then add diced chicken, green chiles, salt, and pepper. Cook for 8 minutes or until the chicken is cooked. Add in the beans and stir. Then remove from heat.

  2. Lay the tortillas out and spread sauce evenly onto each one. Then spoon the chicken into each and sprinkle with cheese. Roll the tortillas up and place them in a greased 9 x 13-inch baking dish. Spread the remaining sauce on top and sprinkle with cheese.

  3. Bake at 350 F for 20 minutes.
