2 boneless skinless chicken breasts

2 tablespoons olive oil

1/4 cup flour

3 tablespoons softened butter

1 chopped shallot

3 minced cloves garlic

8 oz. sliced cremini

1/2 cup dry marsala wine

1 tablespoon sherry vinegar

1/2 cup chicken broth

2 teaspoons chopped fresh thyme



  1. Cut both of the chicken breasts in half. Lay plastic wrap on the top of the chicken breasts and gently pound with a meat mallet to get an even thickness. Season both sides of the chicken with salt and pepper.

  2. Pour the flour on a plate and then with thongs place the chicken in the flour and make sure they're evenly coated.

  3. In a skillet add 1 tablespoon of olive oil over medium-high heat. Once hot add 2 pieces of chicken to the skillet. Cook on both sides until fully cooked and golden brown. Transfer to a plate and then repeat with the other 2 pieces of chicken.

  4. Now add 2 tablespoons of butter, shallot, garlic, mushrooms, and 1/2 teaspoon of salt to the skillet. Cook until the mushrooms are soft.

  5. Pour in marsala wine and sherry vinegar. Stir and scrape along the bottom of the skillet. Let this cook for a couple of minutes.

  6. Now add chicken broth and the remaining 1 tablespoon of butter. Let simmer for a minute. Add the chicken back to the skillet and let cook for 1 minute. Then serve.
