2 lb. ground beef

3 tablespoons olive oil

2 diced onions

2 minced garlic cloves

1 chopped red bell pepper

1 1/2 teaspoons salt

2 tablespoons chili powder

1/8 teaspoon cayenne pepper

1/4 teaspoon ground cinnamon

1 teaspoon cumin

1 teaspoon dried oregano

3 teaspoons beef bouillon cubes

2 14.5 oz can diced tomatoes

16 oz. can kidney beans

1 cup water

fresh parsley for garnish

  1. Add 1 tablespoon of olive oil to a skillet over medium-high heat. Cook until done and browned. Then drain the grease and set aside.

  2. In a pot add the remaining olive oil, onions, and garlic. Sauté for 2-3 minutes. Then add in bell pepper, salt, chili powder, beef bouillon, cayenne, cinnamon, cumin, and oregano. Stir and cook for a couple of minutes.

  3. Add the cooked ground beef and diced tomatoes. Stir and then add in water. Bring to a boil and then reduce the heat and let simmer for about 1 hour.

  4. Add in kidney beans and cook for a couple of minutes. Then serve with fresh parsley and optionally sour cream.
