3 cups diced potatoes
2 cups diced celery
1 1/2 cup minced yellow onion
3 minced garlic cloves
24 oz. clam juice
20 oz. chopped clams
3/4 cup butter
4 cups milk
2 tablespoons red wine vinegar
3/4 cup flour
In a large pot combine potatoes, celery, onion, garlic, clam juice, and some salt. Bring this to a boil then reduce to a simmer and cook for about 10 minutes or until the potatoes are done.
In a skillet melt the butter. Then add in flour and whisk. Slowly whisk the milk in 1 cup at a time. Bring to a simmer to thicken for a couple of minutes.
Remove the skillet from heat and pour the milk mixture into the pot with the vegetables.
Add in the clams, red wine vinegar, salt, and pepper. Stir to combine and then serve.
