3 lobster tails
2 1/2 cups lobster stock
1/2 cup chopped onion
2 teaspoons minced garlic
1/4 cup diced celery
1 teaspoon fresh thyme
1/2 teaspoon paprika
2 tablespoons olive oil
1/2 cup dry white wine
2 teaspoons worcestershire sauce
1 teaspoon cajun seasoning
1/2 teaspoon pepper
1 tablespoon tomato paste
1 cup heavy cream
3 tablespoons butter
In a large pot boil the lobster tails for about 4 minutes then let it cool. Once cooled remove from the pot and reserve the stock.
Put the tail on its side and press down the tail until the shell cracks. Then hold it with the flippers facing you, pull back on both sides to crack open the shell, and remove the meat.
Add the lobster shells back to the pot with 4-5 cups of water. Bring to a boil then reduce the heat to medium-low and let simmer for about 25 minutes.
Chop the lobster meat into bite-sized pieces. Season lightly with cajun seasoning.
Once the lobster shells are cooked, strain and reserve the stock.
In a saucepan add olive oil, onion, garlic, celery, and thyme. Cook for a couple of minutes.
Now add in dry white wine, Worcestershire sauce, cajun seasoning, paprika, and pepper. Cook for a minute.
Stir in the tomato paste and lobster stock. Let simmer for 10 minutes.
Pour in heavy cream and butter. Once butter is melted remove pan from heat.
Pour the soup into a blender and puree.
In another saucepan add 1 tablespoon of butter and cajun seasoned lobster meat over medium heat. Let simmer for about 2 minutes.
When serving top each bisque with lobster meat.
