Ingredients:

1 cup almond flour

1/4 cup granulated sugar

2 3/4 cup powdered sugar

3 egg whites

1/2 cup softened butter

drop of vanilla extract

white chocolate chips

candy eyes

Preparation
  1. In a bowl combine flour and 1 3/4 cup powdered sugar. Stir to combine.

  2. In a separate bowl beat the egg whites until they become foamy and frothy.

  3. Slowly add granulated sugar to the egg whites. Mix together until well combined.

  4. Gently fold the dry ingredients into the whipped egg mixture.

  5. Transfer the batter into a piping bag with a round tip.

  6. Line two baking sheets with parchment paper. Pipe small circles (about 1 inch) onto the baking sheets. Make sure to leave some space in between.

  7. Let the macarons rest for at least 30 minutes at room temperature.

  8. Bake at 300 F for 15-20 minutes. Once done remove from oven and allow them to cool for a couple minutes.

  9. Now for the frosting, whip together softened butter, vanilla extract, and the remaining 1 cup of powdered sugar.

  10. Spoon a small amount of frosting onto a macaron and gently press another on top to create a sandwich with the frosting in the middle.

  11. Now melt the white chocolate chips or chocolate bars (either in the microwave or with a double boiler).

  12. Drizzle the white chocolate over the macarons. Then stick two candy eyes on top.
