Peppermint Meringues
Ingredients:

3/4 cup granulated sugar
1/4 teaspoon cream of tartar
3 egg whites
1/2 teaspoon peppermint extract
pinch of salt
red food gel
Preparation
Place your egg whites in a bowl and beat with a hand mixer until foamy. Then add in cream of tartar and beat again until combined. Now add the granulated sugar in a little bit at a time while continuing to beat the mixture. Lastly, add in peppermint extract and beat one more time until well combined and stiff.
Take a pastry bag and fold the top of it. Add a round tip over the end of the pastry bag. Take a paintbrush and dip it into the red food gel. Brush a stroke from the tip of the bag to the top. Then do another 2 more strokes inside the bag (evenly spaced out).
Spoon the meringue mixture into the pastry bag trying not to smudge the red food gel.
Line 2 baking trays with parchment paper. Pipe 1-inch mounds, each spaced about 1 inch apart.
Bake at 250 F for about 1 hour (they should no longer be glossy and should feel light). Then turn the oven off and leave the meringues in the oven for about 2 hours so they can completely dry.
