1 pork tenderloin 2 - 2 1/2 lbs.

2 tablespoons apple cider vinegar

2 tablespoons brown sugar

2 tablespoons lemon juice

1/4 cup salt

2 tablespoons vegetable oil

3 tablespoons sliced butter

1 tablespoon chili powder

1 tablespoon garlic powder

1 teaspoon salt

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon pepper

1/2 teaspoon dried parsley

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

1/2 teaspoon dried thyme

  1. Preheat oven to 400 F and line a baking sheet with aluminum foil.

  2. In a gallon bag mix 1/4 cup salt and 4 cups of warm water until the salt is dissolved. Then whisk in apple cider vinegar, brown sugar, and 1 cup of ice. Then add pork into the bag and brine for 20 minutes. Remove pork from the brine, rinse, and pat dry.

  3. Now mix chili powder, garlic powder, 1 teaspoon salt, onion powder, smoked paprika, and pepper.

  4. In a skillet add 2 tablespoons of vegetable oil over medium-high heat. Then add pork tenderloin and sear on each side until golden. Transfer to a baking sheet. Now add your choice of vegetables onto the baking sheet (we used broccoli, cauliflower, carrots, and asparagus).

  5. Now mix the remaining herbs, dried parsley, dried basil, dried oregano, and dried thyme. Sprinkle this herb mixture on top of the pork. Drizzle with lemon juice then top with butter slices.

  6. Bring up the sides of the foil to completely enclose the pork tenderloin. Then bake at 400 F until the pork reaches 145-150 F at the thickest part of the tenderloin.

  7. When done cooking remove from oven, loosen the foil, and let it stand for 5-10 minutes before slicing.
