Spinach & Cheese Stuffed Chicken Breasts

Ingredients:

4 boneless, skinless chicken breasts

4 oz. cream cheese

2 oz. shredded mozzarella cheese

10 oz. bag frozen spinach

1/2 diced sweet onion

1 minced garlic clove

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon salt

Preparation
  1. To make a pocket in the chicken breasts, place a hand on top of the breast and insert the knife into the thickest part (about 3 inches wide). Then cut 3/4 of the way through the breast to create a pocket. Dry all the breasts and season on all sides with 1/2 teaspoon of salt.

  2. In a bowl combine cream cheese, mozzarella, spinach, onion, garlic, and the remaining salt. Mix to combine. Then spoon the filling into the pockets of the chicken breasts.

  3. Heat the olive oil in a skillet over medium-high heat. Add the breasts to the skillet and let cook for about 5 minutes. Then flip and add butter between each chicken breast. Spoon the melted butter onto the chicken to make sure it's evenly distributed. Cook until internal temperature reaches 165 F (about 5-7 minutes).

  4. Remove the chicken from the pan and place on a plate. Let rest for a couple of minutes before cutting.
