Stuffed Pepper Soup

Ingredients:

1.5 lbs. ground beef

2 tablespoons olive oil

1 diced yellow onion

2 cups chopped red bell pepper

2 minced garlic cloves

14.5 oz. can petite diced tomatoes

15 oz. can tomato sauce

14.5 oz. can beef broth

2 1/2 tablespoons chopped fresh parsley

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

salt

pepper

1 cup uncooked long grain rice

shredded mozzarella cheese for garnish

Preparation
  1. In a pot heat 1 tablespoon of olive oil over medium heat. Then add ground beef, salt, and pepper. Stir and break up the beef, once fully cooked drain the grease and pour onto a plate.

  2. Add the remaining 1 tablespoon of olive oil to the pot with diced onion, red bell peppers, and garlic. Sauté for a couple of minutes.

  3. Now pour in the diced tomatoes, tomato sauce, beef broth, parsley, basil, oregano, and cooked ground beef. Bring to a boil then reduce heat to low. Cover and simmer for about 30 minutes.

  4. Prepare the rice according to the instructions on the package. Once soup is done simmering add the cooked rice and stir.

  5. Portion the soup into bowls and top with shredded mozzarella cheese and fresh parsley or basil.
