28 oz. can whole peeled tomatoes

6 fresh tomatoes

2 1/2 tablespoons olive oil

1 finely diced onion

2 crushed garlic cloves

1 teaspoon dried oregano

1 teaspoon dried basil

1/4 teaspoon fresh parsley


2 tablespoons light brown sugar

1 cup vegetable broth

1 cup coconut milk

  1. In a pot over medium heat add 2 tablespoons of olive oil and chopped onions and sauté until soft. Once softened add garlic, oregano, and basil. Sauté for 1-3 minutes.

  2. Add canned tomatoes, fresh chopped tomatoes, fresh parsley, light brown sugar, and vegetable broth. Bring to a boil and then reduce heat and let simmer for 30 minutes.

  3. Remove from heat and blend the soup with an immersion blender. Then stir in coconut milk.

  4. Add salt to taste and then drizzle the remaining olive oil on top.
