16 oz. package firm tofu

1/2 diced red bell pepper

1/2 diced yellow bell pepper

1/4 cup diced green onion

handful kale

1 tablespoon vegan butter

1 teaspoon ground turmeric

1/2 teaspoon onion powder

1 teaspoon salt

1/4 teaspoon pepper

  1. In a pan over medium-high heat add butter. Once the butter is melted add in the package of tofu. Use the spatula to break the tofu up.

  2. Add in turmeric, onion powder, salt, and pepper. Mix to combine and cook for a minute.

  3. Now add in diced bell peppers and cook until the bell peppers have softened or about 4 minutes. Then add in kale and cook until slightly wilted. Stir one more time to combine and if you'd like, top with green onions.
